Fast Cheap & Filling Veggie Stuffing

I created this dish when I was barely making it while working at Dollar General. I literally barely had enough food so when I stumbled upon this I was extremely grateful. I'd make a pot of it and put it in individual storage containers and take it to work for lunches. I could make it stretch out into almost a week's worth of meals when I was desperate and it's very filling and satisfying, tastes good and should be sorta kinda healthy-ish with the veggies. A friend of mine even often requested it after she tried it the first time.
Times are getting tight for everybody and only gonna get work until that jackass is out of there somehow, so I've been trying to remember all my old barely making it survival tips. This one couldn't be much simpler. It's a box of stove top instant stuffing mix and two cans of mixed vegetables. I'd pour the veggies and the juice they were packed in into a pot, heat it up and then dump in the stuffing mix. You just stir and simmer until it's your desired level of "done." You can stir in a little butter or margarine if you can afford it to give it even more flavor. Easy. Fast. Cheap. Filling. Makes a few meals. That's a win!
