Healthier Ramen Noodles For You

I have no delusions that I'm going to turn Ramen noodles into health food and I am no kind of health care professional or nutritionist, so when I say healthier I mean in my opinion, from what I can gather. Nothing on this site is ever intended as nutritional or health advice. That said, start by throwing away the sodium packets. My broke ass will actually be saving them to use as budget bouillon but at least it'll be in dishes with multiple servings, all that sodium spread out over a few meals instead of packed into one serving of Ramen fixed the traditional way. These are just a few of the ideas I have and things I'm going to try to make cost effective Ramen healthier and a little less... boring and repulsive.
Tuna Salad Pasta Salad
My first idea is very simple, quick, easy, cheap and similar to what AI gave me for the picture above. I plan to cook the noodles, drain and then add canned green peas (you could do frozen for even more nutritional punch since I keep reading frozen veggies retain more nutrients than canned). Then stir in some chunk light tuna, drained, and a bit of may or salad dressing. I prefer salad dressing, like Miracle Whip, but that's an up to you thing. It's basically tuna salad pasta salad. You could switch the peas for any veggie of your choice and add some grated Parmesan cheese mixed in or sprinkled on top for extra flavor. The AI picture looks to have some sort of red, tomato based sauce which could also be interesting. Lots of ways you could customize this one.
No Egg Noodle Tuna Casserole
Since we started out with tuna, let's just keep rolling with it. Another thing I've been planning for a while is using the cooked Ramen noodles instead of egg noodles. I don't know if it's much cheaper since egg noodles weren't that outrageous last time I checked, but they cook a little faster and are just less fuss in my opinion. I'm planning just using pretty much my niece's tuna casserole recipe because it was awesome. Cook the noodles, spread them out in a baking dish, pour canned cream of mushroom soup over, mix, stir in frozen or canned green peas, chunk light tuna, top with shredded cheese of your choice and crushed plain potato chips. I can never remember if the chips or the cheese go on top but I think the chips do. Bake until the cheese is bubbly/golden and you're ready to go. Nothing really has to be "cooked" per se since the noodles are already done, so just gauge the time to your desired level of hot and "done."
Faux Fast Spaghetti or Fettuccini Cheat
I also plan to try using the Ramen noodles as spaghetti and fettuccini noodles and just pouring on spaghetti sauce or Alfred sauce. Should work just fine, cheaper and quicker than the real thing. To make it healthier, toss in some fresh mushrooms, onion and maybe even bell peppers for the spaghetti and the same with the faux fettuccini Alfredo. Fresh or frozen broccoli florets would also be awesome in the Alfredo and Parmesan cheese would add a little flair to both.
Stir Fry
I love stir fry with rice but rice jacks up my blood sugar worse than pure sugar, so I plan to try using the noodles instead of rice for some stir fry recipes. My go to research assistant, DuckDuckGo Search Assist says Ramen noodle stir fry is a quick and easy dish that combines cooked ramen noodles with vegetables and a flavorful sauce. You can customize it with your choice of protein, such as chicken, tofu, or shrimp. Sounds easy and versatile enough to make many meals and not get burned out on the noodles.
These are just a few of the ideas I've been kicking around. With the worsening Trumpflation and never knowing just how bad he's going to wreck the entire economy, I plan to invest in a hoard of Ramen noodles just to be safe.
