Get Yo' Frico On: Easy Budget Any Time Appetizer

This may be the single coolest thing I've ever seen and I've kinda sort of done it in the microwave but I didn't know it was a thing with a name. Frico. Fried cheese, basically.


Here's the original frico chip article I'm stealing this from. All credit to the original author/creator, yadda, yadda, don't sue me.


Anyhoo, you basically grate 8 ounces of chedder or any hard cheese, put it in a 10-inch nonstick skillet in an even layer and melt over medium-low heat. Continue to cook until the cheese begins to solidify and easily pulls away from the edges of the pan with a spatula.

Use the tip of a spatula to gently peel the edges away from the side of the skillet before you attempt to flip it.

Place a large plate over the skillet and carefully flip the cheese over. Use the plate and a spatula to slide it back into the pan. Cook on the second side until the cheese is solid and just beginning to brown. Slide onto a paper towel-lined plate to cool before serving.


The original author says to never use pre shredded cheese because it has anti caking agents that will mess it up but I've used pre shredded in the microwave and gotten really good crispy cheese. Up to you if you wanna go to the trouble of grating your cheese or buying it already shredded, in my humble opinion.


They also advice that patience is a virtue when preparing frico. So that pretty much rules me out. The cheese has to be fully solidified before you flip it, otherwise you’re just going to make a big mess. It usually takes between 6 and 8 minutes for this to happen. Don’t be tempted to turn the heat up to move things along either, or the cheese will burn. Burnt cheese is gross.


Another piece of advice the original author give is don’t try to serve this warm; the chip needs to cool completely before you serve it or it won’t have that delightful crunchy texture.


It looks as if they break theirs into smaller "chips" to serve. These would be so awesome dipped in chili or your favorite chip dip. They should be a good keto option, too but I won't swear to that.
