To make this casserole, you’ll need a handful of simple ingredients that you might already have in your kitchen:

  • Chicken – 1 or 2 cans of Costco's Kirkland brand chunk white chicken. It's divine!

  • Egg noodles – 1 regular size package, cooked al dente

  • Chicken broth – Optional for richer flavor and moisture

  • Cream of chicken soup – adds creaminess and depth

  • Vegetables – 1 or 2 cans of sweet peas or mixed peas and carrots

  • Garlic – Powder, fresh, whatever you have, because garlic belongs in everything

  • Cheese – shredded cheddar or mozzarella for topping

  • Herbs and spices – Black pepper and Italian seasoning blend or oregano


These ingredients come together to create a casserole that tastes like homemade chicken noodle soup but with a baked twist.


Step-by-Step Prep


1. Cook the Noodles & Prep the Chicken

Start by boiling egg noodles until they are just tender. Avoid overcooking since they will bake further in the casserole. Drain and set aside. For a richer taste, cook them in chicken stock or broth instead of water.


Open the delicious Costco canned chunk chicken and break it up into smaller chunks with a fork.


2. Assemble the Casserole and Release the Hounds

Preheat your oven to 350°F (175°C). Lightly grease a baking dish. Place the drained egg noodles gently inside. Very gently. Stir in your canned peas or peas and carrots. Cover with 1 or 2 cans of cream of chicken soup, add your herbs and spices on top, stir it all up real good and spread it out evenly. Sprinkle shredded cheese on top for a golden, bubbly crust. Depending on your oven you might want to add the cheese about 2/3 of the way through the baking process so it doesn't get burnt.


3. Bake Until Golden

Bake uncovered for 25-30 minutes or until the cheese melts and turns golden brown. The casserole should be hot and bubbly around the edges. This is a guess what. Cook it until it looks done enough to suit you. The chicken is pre-cooked as if everything else, so it's pretty much up to you how hot you like it.

  • Add more vegetables: Corn, mushrooms or your fave veggie can add extra flavor and nutrition.

  • Use different cheeses: Try Swiss, Monterey Jack, or a blend for varied taste.
