Yum. This recipe sounds like it would be easier and even healthier than the way my mom made hers. She fried them in some sort of oil or shortening on top of the stove and used a flour based coating. I snagged this from allrecipes which has awesome, easy, regular people recipes like this one and I adore them. Don't sue me, allrecipes.
Original recipe (1X) yields 5 servings
12 fresh chicken livers
24 buttery round crackers (like Ritz brand, hence the "ritzy"), crushed
1 tablespoon Italian-style seasoning
4 tablespoons butter, melted
Directions
Preheat oven to 350 degrees F (175 degrees C).
Place crushed cracker crumbs and seasonings of your choice in a shallow bowl or plate. Pour melted butter into another shallow bowl or plate. Roll chicken livers in butter or margarine, then in crumbs. I bet you could just rinse them and roll them damp in the mixture and skip the butter for an even healthier option.
Place coated chicken in a lightly greased 9x13 inch baking dish. Bake in the preheated oven for 40 to 45 minutes. Adjust for your own oven and your desired level of "crispiness."
