Bruce Coffman's Almost Famous Pea Salad

Even people who hate peas love my pea salad. Seriously. The secret? The super simple, cheap way I make it masks the earthy taste of the peas that most people don't like. Yum.
Another secret? It's controversial, so I'll get it out of the way first. I use Miracle Whip or a store brand alternative "salad dressing" instead of mayo because I personally don't like mayo. It's too bland for me. It give it that tangy zip. Use mayo if that's your thing, but I won't guarantee the results.
It's basically just 1 or 2 cans of sweet peas, drained very well. Salad dressing (or mayo if you insist) to taste. Enough to coat the peas well and make it creamy but not soupy. Yuck. Then a bunch of Parmesan cheese. Yes. It tastes amazing with the salad dressing, mellows it out a bit and also helps mask that earthy pea taste. That's it. Easy, fast, cheap.
Optional add ins like bacon bits really take it over the top. I'd probably do cubed cheese instead of the shredded shown in the pic. Chill for best taste.
