Cucumber Salad With Sour Cream & Dill Dressing
Well, ain't that easy as can be! I sure will be trying this one but I'm gonna use Greek yogurt instead of sour cream because I'm all healthy like that and trying to lose some belly fat. Guess where I got these recipes? Martha Stewart! Borrowed.
Ingredients
½ cup reduced-fat sour cream (Or Greek yogurt like me!)
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh dill, plus more for garnish (optional)
Coarse salt and ground pepper (Why it's g otta be coarse? Sea salt? That's kinda coarse.)
4 to 6 Kirby cucumbers (about 1 pound), halved lengthwise and thinly sliced crosswise. I don't know who a Kirby is so use whatever kind of cucumbers you like or can find like I'll be doing. And I'm just gonna slice the damn things.
Make dressing:
In a medium bowl*, combine sour cream, lemon juice, and dill. Season with salt and pepper, and whisk well to combine. *What if I use a large one? I bet I will just to be obstinate.
Add cucumbers and toss to coat:
Garnish with more dill, if desired. Serve, or refrigerate, covered, up to 4 hours. Will it run away after four hours?
How to Store
This cucumber salad with dill and sour cream is best eaten the day its made. If you have leftovers, refrigerate them for up to 2 days, according to Martha Stewart and I trust her on this.
Variations
What about some diced tomato? I don't like tomatoes so you can do that if you want or whatever you want to add for some extra flavor and color.
For a richer dressing, use full-fat sour cream. The Greek yogurt instead will give you more protein.
Not a fan of dill? Use an equal amount of parsley, cilantro, or mint. I'll use parsley, myself. If you use mint please don't come to me telling me about it because that sounds nasty to me. I'm just saying.

Quick Pickled Cucumber Salad
My mom made this all the time at home. She just called it pickled cucumbers and didn't add the sugar and used just plain ol' white vinegar. We was poor folk. We didn't know what rice vinegar was. I bet it might be good with apple cider vinegar. I dunno. My mom also just sliced the shit. She didn't do all that fancy cross cutting. Calm down, Martha.
Ingredients
2 large cucumbers, peeled and thinly sliced crosswise
½ medium red onion, thinly sliced
1 teaspoon sugar
¼ cup rice vinegar (or regular people vinegar)
Coarse salt and ground pepper (or sea salt or regular people salt)
Directions
In a large bowl, combine cucumbers, red onion, sugar, and rice vinegar. Season with salt and pepper and toss to combine. It doesn't say how long to refrigerate but you gotta let it marinade a bit to let the vinegar soak in. I'm thinking my mom let it "simmer" for at least an hour. She kept it in the fridge for about a couple days.

Celery-and-Cucumber Salad with Herbs
This sounds really good to me and I had never thought to put cucumbers and celery together though I like both.
Ingredients
6 celery stalks, thinly sliced crosswise
1 English cucumber, peeled, seeded, and thinly sliced crosswise
⅓ cup coarsely chopped fresh flat-leaf parsley
¼ cup coarsely chopped fresh mint (Don't do that. That's nasty. Or just don't tell me about it.)
3 tablespoons extra-virgin olive oil
Coarse salt and freshly ground black pepper (I wish I would grind some fresh pepper. Please!)
Directions
Toss together celery, cucumber, parsley, mint, and oil in a bowl. Season with salt and pepper.
