Budget Recipe: Hot Dog Stroganoff (Don't Gag)

Okay, I know it sounds cringe. I thought so too when I first read it. But, think about the possibilities. I've found turkey hot dogs from my local indie grocer that I really like and are still super budget friendly. They also have polish sausage that is extremely affordable and quite tasty. If the idea of regular hot dogs turns you off, just substitute one of those. I plan on trying it out with both to see which turns out better.


As an added bonus, it's a quite low carb main dish as well as easy, fast, and cheap. Pair it with egg noodles or your favorite pasta. I think it would be awesome with just plain buttered egg noodles.


 

Ingredients

  • 1 tablespoon butter (more if needed)

  • 6 standard-sized hot dogs (plan 1 to 2 per person, or fewer if you are serving kids), sliced into 1/4-inch to 1/2-inch thick slices

  • 1 cup chopped yellow onion

  • 2/3 cup sour cream

  • 1/3 cup water

  • 1 tablespoon chopped fresh parsley, optional


 Sauté onions and sliced hot dogs in butter:  

Melt butter in a large skillet (cast iron works well for this purpose) on medium high heat. Add the chopped onions and sliced hot dogs. Cook, stirring occasionally, until the onions and the hot dogs are nicely browned, 5 to 10 minutes.


 Add the sour cream and water, stir until creamy:  

 Heat until steamy. That's it. Then sprinkle with the chopped parsley if you want and serve with your egg noodles, buttered elbow macaroni or whatever tickles your fancy.
